I’m using New Zealand blue cod in this recipe, but you could also use halibut, blue moki, grouper or any other flaky white fish.

You can make this recipe from fresh or frozen fish.

Simply lay the fish fillets down on an oiled oven tray. Season with salt and pepper. Top the fish with fresh tomatoes, garlic, lemon and parsley. Pour olive oil, white wine and lemon juice in the oven tray before placing it in the oven.

Baking it just until done ensures a tender, succulent, flavorful fish. Be careful not to overcook them.

  1. Rub olive oil on a baking tray, spread out the cod fillets and season with salt, pepper and lemon zest.
  2. Top the fish fillets with the garlic, lemon zest, chilli, parsley and tomatoes. (If using whole cherry tomatoes, just give them a squeeze to break them a little. Just enough for the juice to seep out when cooking). 
  3. Pour the olive oil, lemon juice and wine in the oven tray
  4. Bake in the oven 180 Celsius for about 10 minutes until the fish is cooked all the way through.
  5. Drizzle the fish with juices from the pan, and a sprinkle of fresh parsley on top. Serve with Roasted potatoes
