Ingredients

3 fresh red chili
1 cup fresh parsley
2 cloves garlic
1½ cup fresh or dried oregano
1 tablespoon ground paprika
2 tablespoon red wine vinegar
1 cup olive oil
½ fresh lemon juice only
salt and pepper to taste

Instructions

Combine all the ingredients into a food processor.
Mix thoroughly until all the ingredients are chopped.
Check seasoning. Adjust if necessary.
All the ingredients should be well chopped but still coarse.
Let the sauce rest for an hour or more (overnight is best) before serving to let all the flavors infuse together.

Notes

If you don't have a food processor, you can finely chop the ingredients by hand instead.
Let the sauce stand for an hour or more before serving to let all the flavors infuse together. It needs hours for the flavors to settle and blend together, leaving it to rest overnight is best.

Use a mild or neutral olive oil. A robust extra virgin olive oil, can completely overshadow the other ingredients.
