Sweet crab meat and tender vegetables are combined in a creamy white wine broth finished with fresh herbs. This flavor packed chowder recipe is comfort food that can be easily enjoyed at home any day of the week
Sweat onion, carrot, celery and garlic in butter until soft.
Add flour and mix to thick paste.
Add the wine and cook for a couple of minutes until it's reduced by half.
Add the stock, half at the time. Mix well in between.
Add potatoes. Cook for 10 - 15 minutes.
Add cream and crab meat. Cook for another 10 minutes.
Season and add chopped herbs.
Taste and adjust seasoning.
Notes
Only add the fresh herbs last minute so they stay nice and vibrant. Avoid simmering the soup again after they have been added.Store any leftover chowder covered in the fridge. Good for 3-4 days.It also freezes well for up to 3 months.
