Add yeast to one end of the bowl and salt at the other end then mix together. This is to prevent the salt from killing the yeast.
Add 2tbsp olive oil to the water and add it slowly to the flour while mixing until you have a slightly sticky dough. Once the dough is formed together leave it to rise for one hour. Don’t knead more than necessary.
Grease a tray with olive oil and spread the dough onto it. Stretch it out to the edges of the tray then leave to rise for another hour.
Press your fingers into the dough to make dimples then pour over a mixture of the remaining olive oil, 1tbsp water, flaky sea salt and chopped rosemary.
Bake in the hot oven for 20 minutes.
While the bread is still hot drizzle over 1-2 tablespoon of olive oil then cut in to squares once cooled.

Don't over knead the dough. Only knead until all ingredients are incorporated to a slightly sticky dough
