800gramsPrawns wild caught king prawns is my preferred choice
1AvocadoDiced
1Mango Diced
1-2chili finely chopped
1Lemon juice only
½cupolive oil extra virgin
2cupsBaby spinach leaves
salt and black pepperto taste
Instructions
Peel and de vein the prawns
Cut a criss cross pattern with your knife into the mango cheek.
Turn the mango flesh inside out by pushing on the skin. Remove the diced mango flesh with a spoon.
Mix all the ingredients together well in a bowl.
Serve as a main salad or as a side dish
Notes
Don't over mix the salad as it can go mushy. You want all the ingredients to hold their own. If you prepare a head of time. Keep the ingredients separate and only gently mix them right before serving for best result.
