Brown the rabbit pieces in a heavy-duty frying pan with deep edges.
Add the onion, garlic and saffron.
Cook until the onions are soft and fragrant and the rabbit has been stained by the saffron.
Add the flour and cook for a few minutes.
Add crushed tomatoes, bay leaves, chilli and enough stock to cover everything.
Bring to the boil then simmer on low temperature until the meat is tender. About 2 hours.
Add the cream and cook for a few more minutes.
Serve the rabbit tomato and saffron sauce with Rice, Pasta or potatoes and garden vegetables
