    Rabbit in creamy tomato and saffron sauce
  • 2 Rabbit (Deboned)
  • 1 onion (chopped)
  • 4 cloves garlic (finely chopped)
  • 2 tablespoons flour
  • 4 bayleaves
  • 1 can chopped tomatoes
  • 200 milliliters wine (white)
  • stock (chicken)
  • 1/5 gram saffron
  • 1 teaspoon chilli
  • 100 milliliters cream
Instructions

    • Brown the rabbit pieces in a heavy-duty frying pan with deep edges.
    • Add the onion, garlic and saffron.
    • Cook until the onions are soft and fragrant and the rabbit has been stained by the saffron.
    • Add the flour and cook for a few minutes. Add crushed tomatoes, bay leaves, chilli and enough stock to cover everything.
    • Bring to the boil then simmer on low temperature until the meat is tender. About 2 hours.
    • Add the cream and cook for a few more minutes.
