- Brown the rabbit pieces in a heavy-duty frying pan with deep edges.
- Add the onion, garlic and saffron.
- Cook until the onions are soft and fragrant and the rabbit has been stained by the saffron.
- Add the flour and cook for a few minutes. Add crushed tomatoes, bay leaves, chilli and enough stock to cover everything.
- Bring to the boil then simmer on low temperature until the meat is tender. About 2 hours.
- Add the cream and cook for a few more minutes.
- Serve the rabbit tomato and saffron sauce with Rice, Pasta or potatoes and garden vegetables
