This homemade southern fried seasoning is an excellent spice flour coating perfect for chicken, rabbit meat, pork, fish and seafood.

A well balanced and complete southern seasoning. Simply coat your raw meat or fish pieces evenly in the spiced flour coating mixture then deep-, pan-, shallow fry or bake them in the oven or air fryer.

What is seasoned flour?

Seasoned flour is flour that has been flavored with salt, pepper, and other ingredients or spices used to add flavor to fried and baked foods. It seals in moisture and ensures a crispy, golden-brown coating or crust.

This southern fried seasoning recipe only requires pantry staple ingredients.

How to make southern style seasoning flour

No need to buy ready made spice coating. Making it yourself is very simple and doesn't take long at all.

While you can buy seasoned flour at the grocery store, it is so easy and takes about 2 minutes to make your own. Plus, the seasonings will be fresher and without unnecessary additives or preservatives.

  1. Step 1: Combine all spices into a large bowl.

  1. Step 2: Mix thoroughly until all the spices are well blended and lump free.

Hint: Leave the protein coated with the southern blend seasoning flour for at least half an hour to rest before cooking. This helps for the seasoning to cling on to the meat and not fall off when cooking.

How to use this spice coating

Using seasoned flour adds a layer of flavor to fried and baked foods. There is two main ways to use this spice coating:

Simple light coating for meat and fish

Simply dust your favorite raw meat or fish in the seasoned flour then fry or bake it.

A great way to get even coating on your meat and fish is to put the protein together with a couple of spoons of seasoning in a plastic bag then shake it all around until all the pieces are well coated.

For a crispy fried result:

Use two bowls:

In bowl 1 - add some of your seasoning, add water to make a thick batter mix,

In bowl 2 - add pure spice coating mix.

Leave your protein submerged in the spice batter for 10-20 minutes then transfer it to the dry coating mix and cover it all over before cooking it in the deep fryer, pan or oven. The dry coating mixture sticks to the wet mixture in an uneven lumpy way that creates a crispy coating when cooked. Deep frying it will result in the crispiest coating.

For extra crispy result double coat the protein in the batter and spice mix.

Substitutions

Substitute the corn flour for Rice Flour or Potato Starch

Variations

You can basically make this spice coating exactly how you like it. Adjust the spices and their quantities to suit your preferences. Add any dried herbs or spices that you like to make it your own unique blend. This recipe is medium spiced. If you like it hot simply add more chili powder or less if you like it mildly spiced.

Equipment

No fancy equipment is need for this recipe.

A simple bowl, whisk and kitchen scale is all you need.

Storage

Store this southern fried seasoning mix in a sealed container in a cool, dry place in your pantry. It will last for a long time, however use it within six months for the best flavor.

These ingredients don't stand up well to freezing.

Top Tip

Even coating: Put meat and spiced flour together in a freezer bag, tie it up and shake it all around to get an even coating on the meat or seafood before cooking.

Don't Overcrowd: Crowding the pan or oven tray results in a soggy coating rather than a crispy one

  • 35 grams brown sugar
  • 300 grams corn flour
