Toast skagen is an elegant Swedish dish made from a beautiful creamy prawn (shrimp) salad called skagenröra served on a crispy buttery piece of toast, topped with lumpfish caviar, dill and a slice of lemon. Skagen toast is typically served as an appetizer, canape' or finger food at Swedish dinner parties and in restaurants.

It's classy, magically good, classical and fresh. The perfect start to any meal.

Ingredients for toast skagen
- Prawn, shrimp skagen
- sliced bread
- butter
- lumpfish roe/caviar
- fresh dill
- lemon

Instructions for skagen on toast
- Toast and butter the bread. Cut the crust off.
- Put a large spoon of prawn skagen mix on top.
- Garnish with a spoon of lumpfish roe/caviar, slice of lemon and fresh dill.
- Enjoy!
Variations to this recipe
- use crostini, bruschetta bread or pumpernickel instead of the toast
- use salmon roe or smoked salmon slices instead of lumpfish roe
Storage
Store toast skagen mixture in the fridge separately from the garnish ingredients in the fridge. Make the toast fresh just before serving and combine when ready. Good for 3-4 days.
These ingredients don't stand up well to freezing.
Top Tip
Have all the ingredients ready but make the toast fresh just before serving and assemble when ready. This is to keep the toasted bread fresh and crisp.

Toast skagen
Ingredients
- 1 batch prawn shrimp skagen
- 4 slices bread white or rye
- butter for the bread
Garnish
- 2-3 tablespoon lumpfish roe/caviar red or black
- fresh dill
- ½ lemon slices cut in half
Instructions
- Toast and butter the bread. Cut the crust off. Cut the bread in half if it's large slices
- Put a large spoon of prawn skagen mix on top.
- Garnish with a spoon of lumpfish caviar, slice of lemon and fresh dill.
