De boning the rabbit
First we need to de bone the rabbit.
It takes a bit of preparation to de bone the rabbit but once that is done the rest of the dish is easy to make and well worth it.

You can leave the bones in the legs and just de bone the rest of the rabbit to speed it up. The bones in the legs are similar to chicken drumstick bones and easy to maneuver.
How to cook Rabbit with tomato saffron sauce
This is the perfect meal to introduce anyone who is hesitant to eating rabbit meat dishes. This slow cooked rabbit in tomato and saffron is so tasty even a rabbit hesitant will love it!
- Tender, pieces of wild rabbit meat fried golden brown.
- Add the onion, garlic and saffron and cook for a few minutes.
- Add the flour and cook for a little longer.
- Add crushed tomatoes, bay leaves, chilli and stock.
- simmer on low temperature until the meat is tender. About 2 hours.
- Add the cream and cook for a few more minutes.
Serve with pilaf rice, fettuccine or potatoes and fresh greens from the garden

Wild Rabbit meat in tomato and saffron
Ingredients
- 2 Rabbits De boned
- 1 onions diced
- 4 cloves garlic finely chopped
- 2 tablespoon flour plain
- 4 bay leaves
- 1 tin tomatoes chopped
- stock chicken
- 200 ml wine white
- ½ gram saffron
- 1 teaspoon chili
- 100 ml cream
Instructions
- Brown the rabbit pieces in a heavy-duty frying pan with deep edges.
- Add the onion, garlic and saffron.
- Cook until the onions are soft and fragrant and the rabbit has been stained by the saffron.
- Add the flour and cook for a few minutes.
- Add crushed tomatoes, bay leaves, chilli and enough stock to cover everything.
- Bring to the boil then simmer on low temperature until the meat is tender. About 2 hours.
- Add the cream and cook for a few more minutes.
- Serve the rabbit tomato and saffron sauce with Rice, Pasta or potatoes and garden vegetables
