The most time consuming part is the kneading and for most bread recipes longer kneading gives a better result. However for focaccia bread baking, less kneading is better and you can bake this amazing soft, fluffy bread with only 10 minutes of hands on time.
The best news is that it’s not complicated at all and I will explain in the next few minutes how to make easy no knead rosemary focaccia that is no fuss and taste amazing!
What is Focaccia
Focaccia bread is one of the most popular Italian breads. It’s flat with dimples on top, baked in a sheet pan and topped with olive oil, sea salt, herbs and sometimes other ingredients like garlic, olives or tomatoes. The bread is really soft and fluffy.

How to make fluffy Focaccia bread
Focaccia is one of the easiest breads you can make. Because there is no kneading
- Measure flour, yeast and salt in a bowl.
- Add olive oil to the water and add it slowly to the flour while mixing until you have a slightly sticky dough. Once the dough is formed together leave it to rise for one hour. Donโt knead more than necessary.
- Grease a tray with olive oil and spread the dough onto it. Stretch it out to the edges of the tray then leave to rise for another hour.
- Press your fingers into the dough to make dimples
- pour over a mixture of olive oil, water, flaky sea salt and chopped rosemary.
- Bake in a hot oven for 20 minutes.
- While the bread is still hot drizzle over more olive oil
- cut in to squares once cooled.

This recipe has sea salt olive oil and rosemary topping which is standard but you can also add different extras. Some common extra toppings are:
pitted olives – either sliced on op or folded through the dough
Garlic – Finely chopped

Tips
- Don’t over knead the dough. Only knead until all ingredients are incorporated to a slightly sticky dough
- When adding yeast and salt to the flour, add yeast to one end of the bowl and salt at the other end then mix together. This is to prevent the salt from killing the yeast.
