This Lamb and courgette bake is healthy, low carb, full of flavor and easy to make at home. This recipe came about when I had excess courgette (zucchini) growing in my vegetable garden and I was serving zucchini many different ways. I decided to cut large chunks of zucchini and fold them through my lamb mince sauce together with chunks of capsicum then bake it in the oven with grilled cheese on top.
It turned out really nice and my family loved it!
Now itยดs a regular dish at my house.
How to make Lamb and courgette bake.
First add lots of flavors in the meat sauce.
Cumin, paprika, herbs, garlic and a little bit of chili. The finishing dish reminds me of moussaka because it has many Greek flavors in it.
The meat sauce is very similar to a basic Bolognese sauce. The ground lamb meat is fried in olive oil, onions and garlic. It is then simmered with chopped tomatoes until thickened. Add ground spices that pairs well with lamb. If you prefer, you can use beef mince instead.
How to serve Lamb and zucchini bake
I like to serve it with pilaf rice but potatoes or crusty bread works well too. If you are looking for a low carb meal then just the lamb and courgette bake on its own can easily be a complete meal.
