Creamy Pasta Boscaiola is a delicious Pasta Dish made with Mushrooms, bacon and Cream, served with short or long pasta. The perfect Italian Comfort dish.

Making Boscaiola pasta is something I do a lot at home and it’s always well received. Itโ€™s a rich, creamy sauce that pairs perfectly with a hearty, thick pasta.

This oyster mushroom and bacon pasta sauce is very easy to make, flavorful and the perfect weeknight dinner recipe that taste of the Mediterranean and the whole family can enjoy.

Simply fry bacon and mushrooms until golden and bacon crispy. Reduce white wine in the pan, add garlic and cream. Cook for a few minutes then add grated Parmesan and parsley for added flavor. Serve this delicious oyster mushroom and bacon sauce with your favorite pasta.

I use oyster mushrooms for this boscaiola recipe.

Mainly because that’s what I grow at home and it’s a delicious mushroom perfect for this recipe. However you can substitute the oyster mushrooms to any other mushroom that suits you.

Cooking oyster mushrooms is simple. To begin, tare the oyster mushrooms into the size you prefer for your meal. No need to cut them or use a knife.

Porcini mushrooms is another delicious mushroom variety which would work wonderful in this recipe. Both Porcini and oyster mushrooms can be found in the wild.

Pasta boscaiola is a comfort dish that always hits the spot and so quick and easy to make. That’s what makes it a regular mid-week meal in my house. I like serving it with a leafy salad or steamed vegetables from the garden. Sometimes I add cooked green beans or broccoli to the dish. I just fold it through before serving.

Pasta Boscaiola with oyster mushrooms

Instructions

  1. Oyster mushroom boscaiola sauce
    • Fry the bacon crispy and the mushrooms golden.
    • Add the garlic. Season carefully since the bacon is salty. Remove the bacon and mushrooms from the pan. Set aside
    • Add the wine to the same pan and reduce by half.
    • Add the cream and cook down a little bit.
    • Put the bacon and mushrooms back in. Mix well.
    • Just before serving add the parsley and the Parmesan and mix through.
  2. Garnish

    Serve with cooked Pasta. Sprinkle with parsley and parmesan on top.

    I like serving this pasta with a fresh mixed leaf salad or Rocket salad with vinaigrette.

I used fresh homegrown oyster mushrooms for this dish.

    Mmmmmm. Mushrooms and a pasta on a cold winter’s night! Since I’m living with alpha-gal, I will need to substitute turkey or duck bacon. (And thankfully I’ve been cleared to eat real dairy again, so that’s the only substitution needed to make this alpha-gal friendly fo rme.) Can’t wait to try it!
