These easy thin and crispy Swedish crispbreads are great with any savory spread or topping. Try them with your favorite cheese and this green tomato chilli chutney for a simple but very satisfying snack.

What is Swedish crisp bread?
Swedish crisp bread is a flat, thin and light weight savory cracker called "knackebrod".
Crispbread or knackebrod is a staple food in Scandinavia and eaten alongside most meals. Swedes see it as a type of bread and serve it for breakfast, lunch and dinner as well as a snack in between meals.
There are many different variations of crisp bread. Plain rye cracker is the most traditional one but different variants of seeds, herbs and spices are very common as well.
Growing up in Sweden I have eaten and baked many different flavors of knackebrod. This seed crispbread is my favorite. The recipe is very simple and therefor I make them regularly at home and often have some on hand for an easy and healthy snack.

- plain flour
- sunflower seeds
- flax seeds
- sunflower oil
- hot water
- flaky sea salt

How to make Sunflower seed crackers

These crispbread crackers are easy to make.
- Simply mix all the dry ingredients together.
- Add oil and water.
- Mix to a dough.
- Spread out and roll thin on a baking tray.
- Bake in the oven until crisp and golden.
Variations
- Mix it up with different seeds (pumpkin seeds and sesame seeds works well)
- Add herbs and spices if you like (smoked paprika, italian herbs and cayenne are great)

Storage
They keep well in an air tight container in room temperature. Good for up to 2 weeks.
Top Tips making crispy seed crackers
- use parchment paper both over and under the dough to roll it out evenly. This prevents the dough from sticking to your rolling pin

- Score the dough before baking.
- No need to cut right through, scoring keeps them flat and still able to cut or break them to the same shape once cooked.

Sunflower seed crackers (Swedish crisp bread)
Ingredients
- flour plain
- sunflower seeds
- flax seeds
- sunflower oil
- hot water
- flaky sea salt
Instructions
- Oven 150 C
- Mix all the dry ingredients together.
- Add oil and water.
- Mix to a dough.
- Roll out the dough on a baking sheet with another baking sheet on top. It needs to be an even layer.
- Put on an oven tray and mark squares with a knife. It doesn’t have to be cut all the way through.
- Sprinkle with flaky sea salt.
- Bake in the oven for 1 hour.
- Once cool brake pieces where the marks are.
- Enjoy!
