Ingredients

- Raw crab meat
- Onions
- Garlic
- Carrot
- Celery
- Potatoes
- Butter
- Flour
- Fish stock
- White wine
- Cream
- Chives
- Parsley
- Dill

Instructions
This Crab meat and vegetable chowder is easy to make and taste delicious. An excellent combination of sweet crab meat, creamy soup, tender vegetables and fresh herbs.

- Sweat onion, carrot, celery and garlic in butter until soft.
- Add flour and mix to thick paste.

3. Add the wine and cook for a couple of minutes until it's reduced by half.
4. Add the stock, half at the time. Mix well in between.

5. Add potatoes. Cook for 10 - 15 minutes.
6. Add cream and crab meat. Cook for another 10 minutes.

7. Season and add chopped herbs.
8. Taste and adjust seasoning.
Hint: You can add any additional seafood to this chowder if you like. Simply substitute part of the crab meat for your favorite seafood.
Prawns, calamari, clams or pieces of fish fillets are also great in this soup.
Substitutions
- You can substitute the plain flour to gluten free flour for a gluten free version of this recipe
Variations
- I made this recipe with crab meat however this recipe can be made with any seafood you like. A marinara mix of seafood is a great option.
- You can substitute the vegetables to any veggies of your liking. Sweet corn and peas are great options too.
- You can easily make this chowder thicker or thinner to your liking by adjusting the amount of flour.
- A slightly thicker version of this soup can be a perfect pie or voulevant filling

Store any leftover chowder covered in the fridge. Good for 3-4 days.
It also freezes well for up to 3 months.
Top Tip
Only add the fresh herbs last minute so they stay nice and vibrant. Avoid simmering the soup again after they have been added.
