Garlic and potatoes are my two favorite vegetables to grow at home and to eat. This creamy roasted garlic soup highlights both those ingredients so there is no surprise that this is a favorite dish of mine.

Ingredients
This potato and roasted garlic soup contains simple ingredients that most people have in their pantry already.


Onion – brings sweetness and flavor
Garlic – the main flavor
Potatoes – gives the dish texture, body and creaminess
Bay leaves – for flavor
stock (chicken or veggie) – for flavor
thyme – great flavor, pairs perfectly with roasted garlic
white wine (dry is best) – great flavor
cream – gives the soup a silky smooth creaminess
Parmesan cheese – brings flavor and creaminess
butter – for flavour and creaminess


How to make Roasted garlic cream soup
This is an easy soup to make. Follow the simple steps below:



- Place the garlic on an olive oil greased oven tray.
- Drizzle with more olive oil, salt and pepper. Cover with tin foil and roast in a 150C oven until soft and creamy. Around 40 minutes.
- Saute onions in oil and butter until soft.
- Add thyme and bay leaves, stir.
- Add potatoes and enough stock to cover everything. Simmer for 30- 45 minutes.
- Add the roasted garlic by squeezing the soft flesh out of the skin straight into the soup. Cook for another 10 minutes.
- Add cream and Parmesan cheese, cook for another 5 minutes
- Blend with the hand mixer. Add a knob of butter and blend until smooth.
- Season with salt and pepper.
- Garnish with croutons, grated Parmesan cheese and parsley.
- Enjoy!

Oven 180C
- Dice the bread.
- Spread the bread pieces out on a baking tray season with olive oil, salt and pepper.
- Bake in the oven until golden and crispy.
- Let cool before serving them in your soup
